I miss the farmer’s market! The last weekend they were open for the season, I got these adorable tiny red, purple, and yellow fingerling potatoes. This is one of my favorite easy, hearty, and pretty meals. We chopped up the potatoes, some carrots, leeks, and whathaveyou, added some oregano, seasoning salt, pepper, and olive oil, and stuck it in the oven for about an hour. Ta-da!
